I want to be clear,we DO eat red meat. However,when we eat red meat it is a luxury,and the best part about that is we are able to be discerning about what we buy and can spend the money to buy a product that we are confident was responsibly raised,grass fed,free range,organic,and most important-local. We have amazing responsible ranchers here in Colorado-and some amazing butchers,like Western Daughters,who can educate you.
I certainly don't want to tell anyone their way of eating is wrong,I simply want you to question where your food comes from,how it got to you,what can we do to support our local ranchers and farmers,what can we do to support the welfare of our animals.As my mother says,a happy cow makes for a happy meal.
I also want you to question the health value of each item you put in your body. Would a steak be a better choice for your body than a bean burrito-both steak and beans are high in protein. However beans do not have the negative health impact that a steak does.

Here is a view of my fridge from my food prep this week (P.S.rarely food prep or meal plan,but definitely feel less stressed out when I do!).
The selection includes roasted vegetables,chicken,turkey bacon,lettuce,jalapeños, tomatoes,hummus,guacamole,and homemade pickles.
Yes,my fridge needs serious cleaning!
